Gather your ingredients for Meatloaf Cupcakes!

  • 1 pound ground beef or turkey
  • 1 cup breadcrumbs
  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • ⅓ cup blended cottage cheese
  • 1 egg
  • 1 T Worcestershire sauce
  • 2 tsp garlic, chopped
  • 1 tsp ground black pepper
  • 1 tsp seasoned salt
  • ½ cup ketchup
  • 2 Tablespoons of yellow mustard
  • 4 cups mashed potatoes
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix ground beef, breadcrumbs, onion, green bell pepper, cottage cheese, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt together in a bowl.
  3. Stir ketchup and mustard together in a bowl. Set aside half and mix half into meatloaf.
  4. Fill muffin cups with beef mixture, leaving 1/2-inch space on the top.
  5. Spoon ketchup & mustard mixture to cover top of each meatloaf cupcake.
  6. Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat from muffin cups.
  7. Top each ‘cupcake’ with mashed potatoes. You could also add cheddar cheese if wanted.
  8. Continue baking until potatoes are heated or, if used, cheese is melted; about 10 minutes
